Grilled Banana Breakfast Sandwich


I found a recipe for a similar breakfast sandwich that was NOT clean. It contained cream cheese! I wish...I decided to create my own "Clean" version. Enjoy!

1 small banana (70 cal)
2 slices Ezekial bread (180 cal)
1 tbsp natural peanut butter (100 cal)
1/2 tbsp honey
pinch of salt

1. Cut off one-quarter of the banana and mash it with a fork in a bowl; stir in the peanut butter, honey and salt. Slice bread in half creating four pieces. Spread mixture over two of the halves.

2. Coat a medium skillet with coconut oil spray and heat to medium high. Slice the remaining banana in half lengthwise and then in half crosswise. Place the banana halves in the pan and cook until caramelized.

3. While the bananas are cooking, spread an equal amount of the peanut butter-banana-mixture on each of the two remaining pieces of bread. Arrange the cooked bananas over the mixture and top with the other halves to create 2 sandwiches.

4. Wipe out the skillet, add a spritz more canola spray and place over medium heat. Add the sandwiches and cook until browned on each side.
